  • Just made this little bad boy up, with what I had in. I’m going to call it........

    PICKLED MARMITE MEDLEY

    For the marinade;

    1 Pak Choi, finely chopped
    5cm square of celeriac, chopped into thin matchsticks
    10 Sugarsnaps, chopped small
    2 green chilli deseeded
    shake of mustard seeds
    shake of Chinese 5 spice
    shake of smoked paprika
    shake of spicy Cajun seasoning
    Teaspoon rice vinegar
    2 tiny shakes of low salt soy sauce
    Tablespoon rapeseed oil

    Mix the marinade above together in a bowl. Cover with a teatowel and allow to marinate for one hour.

    Once the marinade has been sitting for one hour, heat a can of Heinz baked beans, together with a bag of vacuum packed Chestnuts.

    Heat one tablespoon rapeseed in a wok. When piping hot, add VERY GENTLY a dash or two of sparkling water. Add one teaspoon Marmite and stir. Add two Strong Hayward’s pickled onions, finely chopped, to make a frothy jus. Keep stirring.

    Spoonful by spoonful, ladel in your veg marinate bit by bit, to absorb and coat with the jus. Add dash more sparkling if needed. Stir and simmer for five mins til hot.

    Serve the piping hot beans and chestnuts into the centre of your plate.

    Then surround and top with the marinated veggies. There should be a deep brown jus at bottom of wok. Use this to drizzle over, to form like a marmite jus / gravy.
